My boyfriend and I did a lot of riding this summer. It was fun.
You know how I am, I like to plan ahead and have my chicken ready for anything.
I made my easy chicken salad recipe a couple of times and chopped in greens into it as our recovery snack to hold us over before dinner….yes, they were long rides where we rolled in after 4 or 5 pm.
Sometimes we did cheese and tortilla chips. But this was noticably more healthy.
The other day, I accidentally left the leftover grilled chicken in the Pyrex dish in his fridge….and we never did make the chicken salad while I was there. Just ran out of time. And I totally forgot until the next morning.
He asked me for a tutorial….so I made a video (it is also below).
It is super easy and a great way to use up that chicken on any given day.
I had mine this time with avocado and craisins – OMG so good!
My Amazing chicken salad recipe is simple:
1/4 cup of diced onion – I prefer white or yellow vs red
1-2 tbsp mayo – preferably olive oil based but not light or reduced fat
1 tsp dijon mustard
sea salt & pepper to taste
1 chicken breast (cooked) diced
1 cup mixed greens of your choice of greens diced
diced avocado
cole slaw
diced cucumber
diced celery
diced jicama
dried cranberries, cherries or raisins
capers
Instructions:
Combine the first 5 ingredients together in a large bowl.
Mix/toss the ingredients until coated fairly evenly.
Once coated with mayo/mustard, add other optional stuff and greens or put on a bed of greens.
Can eat with corn chips, too if mixed with greens. You can eat it on a cracker, corn chip, sweet potato corn chip, potato chip or cucumber or zucchini slices. Lots of options! Or just put it on a bed of greens and add a handful of celery, craisins and sunflower seeds.
