Let’s make Chicken-Potato Skillet with Greens for dinner!
We will made a delicious meal in less than 45 minutes and unfortunately, the zoom has audio but no video to see. But you can at least work through the steps live but without seeing the cues on what the browned potatoes or chicken look like. boo. media fail.

The ingredients you need are:
1 pound of chicken breast or thighs (you can substitute tofu, Quorn or other vegan option, or turkey or pork loin if no chicken is available)
2-3 tablespoons amino acids or soy sauce or dry white wine (my choice)
1/3 cup broth – vegetable or chicken or bone broth
1/2 tablespoon each – dried rosemary, thyme, oregano
1-5 cloves of garlic, peeled
1-2 scallions also known as spring or green onions
2 cups of baby greens mix or kale, chard, spinach or beet greens
1 tbsp ghee if you have it, or butter
1-2 tbsp olive oil
sea salt, pepper to taste
1 cup butter potatoes or fingerling. Can also use sweet potatoes
You will need a good cutting knife and/or chopping knife
